The one thing I really miss about commuting into the city is having the occasional breakfast sandwich. I never had the desire to eat one but over the last 2-3 years have come to embrace it as soon as I became really into breakfast eggs and sausages
Now that I have my own kitchen, I love cooking. I’m having fun experimenting and trying recipes that I’ve always wanted to make. Breakfast is my main stable though. I need it to get through the workday, especially these times where work from home is essential. So I decided to make a SEC — sausage egg and cheese. I used Maple Syrup Breakfast Sausage from Waygu Vermont. The sausage is nice and thick. It’s really a cut above the rest.
What you will need:
1 Egg
1 Vermont Wagyu Link
A bagel (or roll of your choice)
Cheddar cheese
Oil/butter
So for this I used Vermont Wagyu’s Maple Syrup Flavor Sausage. The company is family-owned farm, raises expertly bred Wagyu cattle, descended from Japanese seed stock and prized for its superior buttery flavor, intensely marbled cuts and for being rich in Omega-3 fatty acids. First I put the sausage in a saucer pan and let it boil. Once completed, throw the sausage in a frying pan with a little bit of olive oil or butter. Fry it until desired brown. Cut the sausage link lengthwise down and set aside.
Using the grease in the pan, start frying the bagel or roll on both sides. Add butter or oil if needed. Set side also.
Break an egg in the same frying pan. Leave it in 1-2 minutes. Use a spatula to remove the egg and start building the sandwich.
Put the egg on top of the bottom of the bagel. Add the cheese on top and the sausage on the cheese so can melt between the two hot items.
Put the made sandwich in on the frying pan to give it a little extra heat (and grease). Perfect for your hangover the next day or even Christmas breakfast.
