This September, chef Jean-Georges Vongerichten’s eponymous restaurant at 1 Central Park West introduces a reimagined fine-dining experience with new tasting menus. For the first time since opening in 1997, Jean-Georges debuts vegetarian menus alongside the omnivorous offerings, a natural evolution for the chef who has always been passionate about cooking with vegetables.


VEG FORWARD

For lunch, guests have the choice of either a four or six-course, prix-fixe vegetarian or omnivore menu while dinner presents the option of six and ten-course omnivore or vegetarian tasting menus. Courses pair seasonal produce with international ingredients and the flavors of Vongerichten’s French upbringing, accentuated through his signature vegetable juices and broths. New dishes, set on custom porcelain tableware handcrafted for Jean-Georges by Source & Tradition, include Slowly Caramelized Carrot with red curry, coconut and ginger as well as Peekytoe Crab Dumplings with celeriac-meyer lemon tea.


STRIKING SETTING

Jean Georges’ modern dining room, designed by Thomas Juul-Hansen, features eye-catching light fixtures by L’Observatoire while floor-to-ceiling windows provide glimpses of Central Park and the bustling turnaround of Columbus Circle outside.
