John Fraser Opens The Loyal, Your New West Village Local Bar

New York City chef and restaurateur John Fraser opens The Loyal, a sophisticated neighborhood restaurant in Manhattan’s West Village, inspired by Fraser’s love of the American tavern.

Chef to Narcissa, Narcbar and two Michelin-starred restaurants, Dovetail and Nix, Fraser takes a different turn at The Loyal. His menu is built for comfort: simple dishes grounded in his trademark technique. Shareable items include drunken eggs with chili oil, Parker House rolls with cultured butter + smoked salt, and chopped steak with guindilla peppers, olives + melba toast. Entrees feature elevated classics such as shrimp scampi, black bass aqua pazza and their namesake burger, The Loyale with cheese, while a selection of vegetables, grains and pastas round out the playful and approachable menu. Sundaes are a focus for dessert, including a sundae for two with a rotating selection of toppings as well as a Japanese-inspired sundae.

The concise cocktail list by Salvatore Tafuri features inventive drinks such as a riff on a Collins and Old Fashioned, and the 100-bottle wine list includes both easy-drinking, affordable options as well as eclectic selections curated by beverage director Amy R

The Loyal evokes a feeling of casual indulgence with the warmth of your favorite local. Designed by home studios, the space blends the traditional and romantic motifs of European bistros with the high-energy allure of downtown Manhattan. The uniforms, in collaboration with Club Monaco, are understated yet refined, fitting with the restaurant’s laid-back appeal.
