Everyone loves a good summer cocktail and this summer has been filled with tons of great ones. I decided that we need to celebrate some of the great ones. 2 Parts Freshly Squeezed Lemon Juice

4 Parts Soda Water

Build over ice in an Absolut ELyx Copper Jug, gently stir and garnish with blood orange wheels.

Water Lime Build on ice in a wine glass.

Stir well. Garnish with a lime wedge.

50ml Greenall’s Extra Reserve

15ml Cointreau

15ml Fresh Lemon Juice

1 Large teaspoon of quality thin-cut orange marmalade

Pour all the ingredients into a shaker and stir to dissolve the marmalade. Fill with ice, shake and strain into a chilled cocktail glass. Garnish with an orange twirl and serve.

8 oz Tequila

2 oz Lime Juice

2 oz Simple

1/2 Jalapeno Pepper

10 Basil Leaves

1/2 Watermelon

Put in blender and process until very fine and emulsified. Strain and keep in the refrigerator.  Use a Cocktail Glass and garnish with fresh basil *makes 5 servings

½ cup ripe yellow peach, skin removed

1 tablespoon agave nectar·

4 teaspoons

Aperol

2 teaspoons white chia seeds ·

1 cup prosecco

Thin wedges of ripe yellow peaches, to garnish

Mini food processor or blender 2 vintage coupe glasses Place the peach into a mini food processor or blender along with the agave nectar and Aperol. Blend until smooth. Transfer the purée to a small bowl and stir in the chia seeds. Leave the chia seeds to swell for about 5 minutes. Divide the peach mixture between the glasses. Half- fill each glass with prosecco and mix well to distribute the Peach purée with the prosecco. Top with the remaining prosecco and garnish with a peach wedge.
